The cylinder heads are obviously the most vulnerable parts. That said, the temp gauge reads from the water tubes in the back of the cylinder heads and the cooling fan is actuated by a sensor in the bottom tank of the radiator. I'd take reads from various spots and compare, but don't forget that the whole dynamics of cooling is based on full operating temp and air circulation in the engine bay.
